Gut healing - Mint Slice Panna Cotta

The Dessert that Heals and Seals

Who said tasty desserts can't be nourishing, provide great health promoting benefits and taste amazing at the same time! This great gut healing, gluten free, dairy free and sugar free dessert ticks all of those boxes and more, leaving you nourished, happy and healthy!!! 

Ingredients:

3 x tins of coconut cream (270mL) - I use Ayam brand (one of the cleanest I can find locally)

Gelatin powder/leaf - I used Great Lakes for this recipe

Cacao

Food grade peppermint oil (great soothing properties for an inflamed stomach/gut lining)

(This recipe made five large serves. I used one tin of coconut cream for each layer. You could make 1-2 serves by using just one tin of coconut cream.) 

Method:

Bring 1 x tin of coconut cream to a simmer in a saucepan.

Add 1 tablespoon of cacao and 1 tablespoon of honey (sweeten to taste).

In a separate bowl prepare gelatin as per packet instructions - I used half a tablespoon of gelatin mixed with a couple of tablespoons of water to one 270mL tin.

Mix gelatin mixture into coconut cream over heat. Continue to stir until gelatin has dissolved.

Pour into ramekins and set in fridge (if you want to set some aside for the top layer keep in saucepan at room temperature).

Once firm (10 to 20 minutes) start the mint layer. Repeat the steps above with the second tin of coconut cream excluding the cacao and adding the mint oil. Add 5-15 drops gradually and continue to taste. Essential oils can be very strong.

Pour the mint layer onto the set cacao layer and return to fridge.

Once firm prepare the final cacao layer (repeating steps above).

Allow to set then Bon Appetit!!!

If making 1-2 serves and using only one tin of coconut cream put some cream aside for the mint layer and adjust flavours to taste. Or if layers aren't your thing mix the cacao and mint together in one batch.

Can be eaten once set and/or also stores well in fridge for 2-3 days.

This is a great dessert for first timers experimenting with gelatin and or when looking for a sweet treat with gut healing benefits. (this recipe is part of my heal and seal gut protocol for clients with a leaky gut).

If once set you find the panna cotta is too firm or dry re-melt and add more coconut cream to each layer. Likewise if the consistency is too soft or jelly-like add more gelatin.
